I have been living on a gluten free diet since I was about 25 years old. When I was diagnosed, I was devastated, and instantly thought “oh crap I am going to have to eat bad toast for the rest of my life” (I can’t stress how much I really loved toast).
My GP must have saw my face ticking through the motions and reassured me that wine was still gluten free.
I am 27 now, and I know the GP was definitely correct but also, that the food is definitely not as bad as you think.
My transition was made easier by my amazing partner being adventurous with all foods… and it was definitely helped by the fact that I live in Ireland, where the variety and quality of ingredients is excellent, but the restaurants around are even better.
While I don’t feel I am a professional coeliac, I have definitely picked up some tips along the way which have helped myself and friends out.
